Preparation
- In a bowl, mix the sourdough and water by hand.
- Add the flour and salt. Mix everything well by hand; avoid kneading the dough.
- Cover and let sit 1 hour at room temperature.
- Fold the dough over on itself 4 times, taking care not to knead it.
- Let sit for 2 hours at room temperature.
- Shape into a ball and let sit for another 20 minutes.
- With a rolling pin, make a round dough 12 to 14 inches in diameter.
- Dress the pizza with your favorite ingredients.
- Let sit for 30 minutes.
- Bake in a 450 °F oven until the internal temperature of the dough reaches 205 °F – about 15 minutes – or until the dough is lightly browned.
