Daniel Des Rosiers has established a special relationship with some outstanding organic farmers from all over Québec Some have agreed to set aside a piece of land for growing ancient grains for his bakery.
They share the same mission: the re introduction of ancient grains in the food chain and consequently preserving the bio diversitiy of grain: ancient wheat such as emmer, Einkorn, touzelle and Red Fife to name a few. This close community of certified organic producers enables the bakery to acquire quality grains and ingredients.
