For Those Who Long for an Authentic Whole Grain Bakery
Many of us grew up with the homemade bread made by our parents and close relatives, only to leave them behind for the mass-produced white bread found in large grocery stores. Though these loaves of bread might satisfy our cravings for carbohydrates, they're a far cry from the food that comes to mind when we think of our homes, our past, and time-honored traditions.
For loaves of bread baked with the hearty ancient grains favored by families for hundreds of years, people come to Boulangerie Des Rosiers. We exclusively use sourdough made from flour milled on site, and all our hand-folded dough undergoes a long fermentation of 12 to 18 hours, ensuring those flavorful enzymes shine through in every single bite.
Due to the nature of our fast-paced world, most people do not have time to make this bread themselves. The slowly made food of previous generations has been replaced with fast foods, cheap snacks, and quick lunches. As long as our bread is within reach, though, grocers and residents will always have a healthy, hearty, and authentic option.

A French Bakery Born Out of a Passion For Bread
While profit motivates other businesses, it is passion that guides us.
Daniel Des Rosiers, Boulangerie Des Rosiers's founder, had always enjoyed making bread in his spare time as a financial advisor. He'd study the methods of renown bakers, he would travel to learn the time-honored traditions, and he'd sell his loaves at local farmers' markets on the weekends.
It wasn't long before baking became more than a hobby and Daniel was establishing himself in his production bakery and seeking out other bakers. To this day, the boulangerie is still expanding while his meticulous baking methods continue to evolve, as well.
The Artisanal Methods of Our French Bakery
Before we hand fold our dough, ferment the loaves, or prepare the sourdoughs, we focus on the flour.
Our flour is milled on an on-site stone mill every single week. We guarantee total freshness with our flour too, as it never has to travel far to reach us. Our flours only come from the local farmers of Québec.
It isn't just the stone mill that gives our bread that timeless touch, either. We exclusively rely on sourdoughs—the very same doughs that have sustained civilizations for centuries. The result is a digestible, nutrient-rich bread free of those undesirable commercial yeasts.
Slow Dough: Organic Bakery Breads with the Best Flavors and Textures
Here, we only use the fresh flours made from nourishing ancient grains. While these coarse flours might not look like the fine white flour we're used to seeing in cookbooks; it is healthier. Coarse flours contain more nutrients than fine flours!
We have loaves for every taste and preference. Whether you're looking for the garlic-laden aromas of miso bread or a loaf of pumpernickel made from organic rye flour, beet syrup, and organic sourdough, we can help you.
We Are a Certified Organic Bakery
Our 100% sourdough bread is officially Certified Organic by Ecocert Canada. This certification doesn't just take into account the flours we use, but every single ingredient that enters our bakery.

Some of our most beloved loaves of bread include:
- Landbrot Bread
- Volkornbrot Bread

Our Bakery's Bread is for Everyone: A Gluten-free Bakery
Some people think that in the world of artisanal baking, gluten-free bread goes against the grain. We beg to differ. Gluten-free bread isn't a trend, and it has wonderful flavor profiles that cannot be captured by any other kinds of bread. Our teff bread, for example, is made from gluten-free flour that has been central to Ethiopian diets for centuries.
Many of us have issues with the digestion of gluten. Our sourdough formula's longer fermentation period breaks down gluten into more easily digestible particles. However, if you have a gluten allergy, we recommend sticking to our strictly gluten-free offerings.
Locally Sourced Bakery Ingredients from Local Organic Farmers
Our ethos is about more than just delicious traditional bread. As a company, we support our local farmers, our local community. All our ingredients are sourced from farmers that live just nearby. We’re talking about grains, flour, and more that come straight from the earth that we stand on––no long trips in the back of an 18-wheeler. Our ingredients come straight from the source—the earth that local Quebec farmers work and the communities they help support.
Sure, you could argue that because we buy our ingredients locally, we have reduced our carbon footprint, our environmental impact. It’s absolutely true. But what interests us more is creating sustainable local communities in which real people can make a living and thrive. From the beginning, we wanted to be a part of that kind of community building. And it’s something we’re very proud to be a part of.
The Bakery Bread That Tastes Like Home
But there’s another reason that we buy our ingredients from local farmers. Our bread gets its unique taste from the earth in which the ingredients were grown. In Canada, where industrial agriculture is the norm, we often forget that wheat, whole grains, oats, and other ingredients taste different depending on the soil and water that they use to grow.
In other parts of the world, as in France and Italy, for example, certain products are tied directly to the geographical area that they are produced in. Even if the grapes of a Bordeaux were grown elsewhere, it would never taste the same. And parmesan cheese can only be named as such if it comes from the Parma region.
At Boulangerie Des Rosiers, we like to think of our bread in the same way. Even while making traditional German Volkornbrot or Einkornbrot, it is made with locally sourced ingredients that were tilled from the soil right here! Our bread contains the flavours of the land. It contains the flavours of home. It contains flavours that define our communities.
An Authentic Whole Grain Bakery
We all grew up on bleached white flour. But at a certain point, we had enough. We wanted to make bread with flavour. Bread that tasted like the land. Bread that could start a tradition.
That’s why we centred our bakery on the dramatic and rich flavours of ancient whole grains. Locally sourced, we mill these ancient grains on a traditional stone mill, to get the consistency, texture, and flavour just right. For some, this may seem like an extra step or a superfluous excess. To owner Daniel Des Rosier, this is one of the essential components of bread making.
By controlling the coarseness of the grain, we gain control over the flavours and textures that make our bread unique. We also allow much more nutrients to stay in the bread, making a healthier bread that’s perfect for the whole family!

A Leader Among Local Bakeries
There are many bakeries nearby that create the bread we all love, but few go as far as sourcing local ingredients and using a stone mill to create flour by hand. We go above and beyond to transport you back into the past, into the realm of our ancestors—through flavour.
Chemical additives are never used to produce our natural flavours, and each step in our long baking process is carefully monitored and performed by hand in small batches. This makes a world of difference in the quality of our finished product. We invite you to taste the difference for yourself. Reach out to us to place an order or pick up our delicious products at any of our many retail partners' locations.
