An Authentic Whole Grain Bakery That Doesn’t Cut Corners
Once a week, our bakery’s ancient grains are milled on a stone mill by Daniel Des Rosier himself. Some might think this is an unnecessary step for such a busy person to perform, but for us, it an absolutely essential step. When we mill the grains ourselves, we are able to control the granulometry (the coarseness or fineness of the grain) ourselves.
Here, we value the coarse flour over the fine flour. While you might be used to seeing fine flours in the supermarket, a coarse grain is richer in nutrients and best suited for excellent sourdoughs.
Our French Bakery’s Ingredients Are Local, but Our Recipes Are from All Over
Take our Miso bread, for example. While many might be unfamiliar with miso bread, it has a rich history in Japan. This delicious bread is high in protein and made from miso (fermented soybeans and cereals), organic unbleached wheat flour, Red Fife flour, and organic sourdough. This bread has a rich garlic-like smell and carries a strong flavor foreign to many unfamiliar with Japanese cuisine.
